Almond Flour Sourdough Loaf
A deeply satisfying, crusty loaf made entirely without grains. Fermented for flavor, baked for texture — this is the bread you thought you'd never eat again.

Preheat and prepare
Preheat your oven to 375°F (190°C). Line a standard loaf pan with parchment paper, leaving an overhang on the sides for easy removal.

Mix dry ingredients
In a large bowl, whisk together the almond flour, psyllium husk powder, baking soda, and sea salt until evenly combined and no lumps remain.

Combine wet ingredients
In a separate bowl, whisk the eggs until lightly frothy. Add the apple cider vinegar and olive oil, whisking to combine.

Form the dough
Pour the wet ingredients into the dry and stir with a spatula until a thick, slightly sticky dough forms. Let it rest for 2 minutes — the psyllium husk will absorb moisture and firm the dough.

Shape and score
Transfer the dough to your prepared loaf pan and smooth the top with damp fingers. Use a sharp knife to score a shallow line down the center — this helps the loaf rise evenly.

Bake to golden
Bake for 50–55 minutes until deep golden brown and a toothpick inserted in the center comes out clean. The loaf should sound hollow when tapped on the bottom.

Cool completely
Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack. Cool completely before slicing — at least 30 minutes. Cutting too early will result in a gummy interior.
Recipe notes
Store wrapped at room temperature for up to 3 days, or slice and freeze for up to 3 months. Toast directly from frozen for best results.
